Asian Kale Salad with Peanut Dressing
This salad is filled with flavor in every bite. The peanut dressing is creamy and flavorful, which makes the whole salad satisfying and fulfilling.

- â…“ cup peanut butter
- Â¼ cup rice vinegar
- 1 lime, juiced
- Â¼ cup olive oil
- 2 Tbsp. soy sauce
- 2 Tbsp. brown sugar
- 2 cloves garlic, minced
- 2 tsp. ground ginger
- 6 cups Simple TruthÂ® Baby Kale, chopped
- Â½ cup Simple TruthÂ® Whole Carrots, thinly sliced
- 1 red bell pepper, sliced
- 1 cup red cabbage, sliced
- Â½ cup Simple TruthÂ® Cilantro, chopped
- Â¼ cup slivered almonds
- 1 Tbsp. sesame seeds
For the dressing, whisk all ingredients together in a small bowl until smooth.
In a large bowl, combine the salad ingredients and top with the dressing.
Serve and refrigerate leftovers.
